dc.description.abstractBased on the differences of enzyme activity in the muscles of healthy and diseased pork, a portable analytical instrument for the detection of pork quality was developed. The instrument composed with hard and soft wares has been applied to the detection of pork in the market. According to the response curves obtained, the diseased pork could be identified fast and accurately. The coincident rate with the actual facts was around 100% and 96% for the healthy and diseased pork, respectively.zh_CN
