Abstract
我国餐饮业是个历史传统和悠久的行业,文化丰富,积淀深厚,如何赋予我国传统饮食文化以现代内涵,迎接全球经济一体化和国际化进程的挑战,是我们当前的重要任务。多年来,在餐饮业中提到国际化经营,更多的理解只是到国外开店,然而众多企业拓展海外的经历却让我们深感惭愧和无奈——或是一二年关门,或是连人带钱都收不回,能站住脚跟的很少,称得上成功的更是凤毛麟角。对此,分析原因、探寻症结的讨论很多,一些后来者也据此调整经营战略,改进管理方式,但收效甚微,局面并没有突破性的改观。因此,中餐的国际化经营课题该如何理解,中餐业以何种方式进行国际化且又该如何进行跨国经营,应是我们必须重视和加强研究的一个重要课题。本论文旨...
