Abstract
福建历史上是蔗糖的重要产区,福建蔗糖业的发展经历了漫长的过程。蔗糖需求是带动生产和销售的重要因素,近代以前,福建传统蔗糖业在旺盛需求的带动下发展迅速,伴随着国内外市场的扩张,福建蔗糖生产与销售也随之兴盛。明代福建地区蔗糖业的发展表现在:产糖地域扩大、制糖工艺进步、产糖品种多样、贸易的扩大这四个方面。清前中期,福建蔗糖业在生产区域、甘蔗种类、制糖品种、国内外贸易等方面均较前代有所突破,呈现出稳步发展的势头并出现了“糖粮争地”的情况。 清末民初,国内外市场结构发生了变化,在需求不稳定的作用下,这些变化表现为福建蔗糖从依靠国内外市场过渡到主要依赖国内市场,而洋糖输入和战争又导致国内市场需求的减弱,...
