dc.description.abstractCapsaicin, dihydrocapsaicin and their mixtures were studied by 1D\ 1H NMR spectra,\ 1H 1H COSY spectra, 1D\ 13 C NMR spectra and DEPT spectra.The\ 1H and\ 13 C chemical shifts were obained.A method based on NMR spectra was employed to determine the relative content of capsaicin to dihydrocapsaicin in natural capsaicins.
